Chicken lollipops with south Indian twist

This is an Indo-Chinese apetizer and it is made from chicken wings. To give a lollipop shape, pull the thin layer of flesh to the other end of the thick bone and make like a lollipop. You can see this in my previous chicken lollipop recipes. Otherwise, you can ask your butcher to do it or is also available readymade in the market.

You can make chicken lollipop according to your taste and you can add your own spices. This dish is in a dry form and it is eaten as a starter or any time you want. I will call my chicken lollipop as an Indo-Chinese chicken lollipop.

In this, I have marinated the chicken with some sauces and other ingredients and fried directly. This is unlike my other recipes, where you dip the lollipop in a batter and fry. I just wanted to have a different taste. Always cooking the same recipe and eating it is boring. We can make a few changes and have a new taste. In this I fried a few pieces directly from the marinade and I coated a few pieces with breadcrumbs and then fried.

The sauce I prepared is with the same ingredients I used for my other chicken lollipop recipes, but I made a slight change for this recipe. I added chopped onions and made it a little more saucy.

Ingredients

  1. Chicken - 300 gms or 7 to 8 wings
  2. Marinade

  3. Soya sauce – 1 tsp
  4. Vinegar – 1 tsp
  5. Egg – 1
  6. Ajinomoto – 1/4 tsp
  7. Pepper powder – 1/4 to 1/2 tsp
  8. Chilli powder – 1/2 tsp
  9. Corn flour – 3 tbsp
  10. Maida (plain flour) – 2 tbsp
  11. Chilli sauce – 2 tbsp
  12. Colour (orange, biryani colour) - optional
  13. Salt - as per taste
  14. Coating

  15. Fresh bread to make breadcrumbs- 3 slices {Grind the bread slices in a dry coffee grinder or any spice grinder to make the breadcrumbs}
  16. Sauce

  17. Oil – 1 tbsp
  18. Curry leaves - 15
  19. Onion (small) (chopped) – 1
  20. Garlic (chopped) – 2 to 3
  21. Chilli powder - 1/2 tsp
  22. Pepper powder – 1/4 tsp
  23. Sugar -1/2 tsp
  24. Vinegar- 3/4 tsp
  25. Salt - as per taste
  26. Tomato ketchup – 1 tbsp
  27. Soya sauce – 1 tsp
  28. Chilli garlic sauce – 1 tbsp
  29. Water – 1/3 cup

Method

  1. Chop the onions, garlic and green chillies very finely.
  2. Marinating and frying

  3. Take a bowl and put all the ingredients for marinade and mix well. Check the seasoning. Add chicken lollipops into it and mix well. Refrigerate for 1 hour.
  4. Take the chicken out of the fridge 1/2 hour in advance before frying. Be careful in adding salt as soya sauce has a good salt content.
  5. If you want, you can deep fry it directly from the marinade. It will give you a crispy texture.
  6. Alternatively, coat the marinated chicken lollipops with breadcrumbs and keep it ready for deep frying.
  7. Heat sufficient oil and when it is hot, drop the breaded chicken lollipops in oil very carefully and fry it on medium heat. It will take 10 to 12 mins to cook. Cook until the chicken is cooked well.
  8. Never fry the chicken on a very high heat. Otherwise it will become dark soon and the inside will not be properly cooked.
  9. Whenever you are frying - deep fry or shallow fry - we should not turn the chicken pieces immediately. Otherwise the marinade will get separated from the chicken pieces. We should also not turn the pieces too often.
  10. Drain all the oil from the chicken lollipops using a kitchen towel/paper.
  11. If you want to serve it directly without any sauce, you can serve it. Wrap the end of the chicken bone with aluminium foil to make it pretty and like how it is served in the hotels.
  12. For the saucy chicken lollipops

  13. Put oil in a pre-heated pan. When the oil is hot, add chopped onion, garlic, curry leaves and green chillies. Stir for a few minutes until it is cooked.
  14. Add all the sauces and dry spices one by one. Mix well. Stir continuously so that it does not burn. Add water and stir. Let it cook for a few minutes until the rawness of chilli and other ingredients is gone and a thick saucy consistency is reached.
  15. It will not take more than 3 mins. Check the seasoning.
  16. You can reduce the flame and cook.
  17. Taste and see if you require anything else for the sauce.
  18. If the water gets dry, add a little more water to make the sauce get to your consistency. Switch the heat off.
  19. Pour the spicy sauce on the crispy fried chicken lollipops and eat it.

Notes

  1. You can make any sauce of your taste like chilli sauce or manchurian sauce.
  2. Do not turn the chicken pieces too quickly while frying, otherwise the coating will get separated from the chicken pieces.
  3. While making sauce, you can add ginger and spring onions. This will give you a different taste.
  4. I have fried a few pieces directly from the marinade and I have coated a few pieces with breadcrumbs also before frying.
